Child obesity problems may be on the decrease...slightly...but there's now a dramatic new problem with teenage girls. In this episode we feature part one of a very interesting interview with Sydney University nutritionist and dietitian Dr. Jenny O'Dea.

Our kids sports trainer Phil Cunningham this time tells about something that is a great preparation for other sports - yoga.

And there's another great recipe for food that kids will love - Lentil Burgers with Yogurt Dressing. Belinda Lewis tells us all about it. Meantime here is the recipe...

Lentil Burgers with Yogurt Dressing.
Four and a half ounces chicken broth
1 cup lentils
1 small carrot
Quarter cup of mushrooms
1 egg
Quarter cup dry bread crumbs
3 tbsp chopped onion
3 cloves garlic
1 tsp thyme

METHOD
Boil broth and lentils until water is absorbed. Process all ingredients together. Make into patties and refrigerate until chilled.

You can cook the patties in the oven on baking tray or quickly cook in pan on stove top.

YOGURT DRESSING
1 cup of plain yogurt
1 clove garlic
Finely diced cucumber
Cracked pepper
Squeeze lemon juice
Finely chopped mint leaves

Assemble lentil burger on toasted bun with yogurt dressing, tomato, lettuce and spanish onion.

Serve with chips or salad.

11/2 Cups Milk

3 eggs

 cup self raising flour

 cup melted butter or margarine

Salt & pepper

Place all ingredients into a bowl and mix for five minutes

Pour into a large greased quiche plate

 Sprinkle with:
        &n bsp;         &n bsp;      Chopped onions,

        &nbs p;         &nbs p;      Diced  Ham     

        &nbs p;         &nbs p;      Diced Tomatoes          

        &nbs p;         &nbs p;      Cup of Corn Kernels

        &nbs p;         &nbs p;      Cup of Grated Cheese              

(You can use your imagination for any toppings.)

Bake in moderate oven 45 mins

Belinda's Pumpkin Soup (Spray of canola or olive oil) 1 onion finely chopped 1 kg butternut pumpkin, peeled and chopped into small pieces 750 ml chicken stock 2tlbs carnation light and creamy evaporated milk 2tbls chopped fresh parsley Freshly ground pepper to taste.

Spray a large pan and heat add onion and cook until soft add pumpkin and stock bring to boil. Reduce heat and simmer partially covered for about 20mins or until pumpkin is very soft. Puree the soup in blender until smooth stir in parsley and milk and return to saucepan and heat gently without boiling again. Season and Serve Great with Garlic Bread

Belinda's Hearty Vegetable Soup

(Spray of canola or olive oil)

1x onion chopped

2tps minced garlic

2x carrots chopped

4x stalks of celery chopped

330g peeled & chopped pumpkin

1x lge zucchini chopped

1x litre vegetable stock

400 g chopped tomatoes

1tps dried oregano

ÃÂ cup macaroni

300 g can butter beans rinsed and drained

2tbls fresh parsley chopped

 

Heat oil in a large pan and cook the onion over medium heat for 3mins or until soft. Add garlic and cook for another minute add carrot, celery, pumpkin & zucchini and stir into the onion mixture. Add stock, tomatoes and oregano bring back to the boil reduce heat and simmer partially covered for 10 mins. Add the pasta and cook for a further 10mins or until pasta and vegetables are tender. Stir the butter beans into the soup and heat through, just before serving stir in the parsley.

 

Delicious served with crusty bread.

BELINDA'S HEALTHY QUICHE
Medium tin of tuna
One cup crushed savoury biscuits
Three eggs
Cup of milk
Two cups low fat grated cheese
Medium grated onion
Tablespoon chopped parsley
Juice of small lemon
Salt
Cracked pepper

Mix all together in a bowl. Pour into a dish and cook for 30 mins in moderate oven. Also can be cooked in a muffin tray to give individual serves.

Belinda's Shepherds Pie

Onions

2x cloves of crushed garlic

750 grms mince meat

1x tblesp tomato paste

1 x cup mushrooms (optional)

 1x cup diced capsicum

1x cup peas

 2xtps mixed herbs

1xcup beef stock

 6 lge Potatoes mashed

 Half a cup of milk

 Butter.

 Mixed herbs

Dice the onions and lightly brown them. Mix in the garlic.

Add mince and cook through until lightly browned.

 Add capsicum. (Use red and green to look more appealing.)

Add mushrooms, peas, corn, tomato paste, two cups of water plus two cubes of beef stock.

 Add mixed herbs.

Let simmer for 15 mins. as you peel and boil some new potatoes until soft. Strain them and add half a cup of milk, some salt reduced butter, a little pepper.

Mix until light, fluffy and creamy.

Place the simmered mince into a large baking dish.

 Add the mashed potato covering the mince.

 Sprinkle some mozzarella cheese and paprika for a garnish.

 Put in oven and bake for 40 mins.

Recipe: "Belinda's Apple Jelly"
(serves 6))     
1kilo of cooking apples     
4 rounded tablespoons of caster sugar    
1 cup of  water 
1 orange or lime jelly     
Find a knife, a saucepan and a sieve for the apple mixture. You will need a mixing bowl and a pretty bowl for serving the apple jelly.   
Peel,core and slice the apples.Measure the sugar and water into a large saucepan and stir over a low heat to dissolve the  sugar . Add the sliced apples , cover the pan with a lid  and simmer very gently ,stirring occasionally until the apples are quite soft (takes about 10 minutes).
Draw the pan off the heat and add the jelly in pieces.
Stir until the jelly is dissolved .The pan should should be hot enough to do this.

Belinda's Chicken Curry

Cut up pieces of chicken. Add peas, broccoli, potatoes, capsicum, snow peas, carrots, onions and a little garlic.

Stir fry the chicken and vegetables. Add a little sesame oil for flavour.

Sauce to add: Light coconut cream and curry powder.

BELINDA'S THAI BEEF SALAD...

Lean rump or sirloin steak
3 tablespoons soy sauce
3 cloves crushed garlic
2 tablespoons lime juice
150 grams of assorted salad leaves
Sliced cucumber
Sliced cherry tomatoes
Finely chopped spring onions

Marinade steak 20 minutes in soy sauce, garlic and lime juice. Cook meat either side for 3 mins. Leave to cool.

DRESSING: One tablespoon fish sauce, sesame oil, soy sauce, honey, 2 lime leaves. Mix all together.

Combine mixed leaves and tomatoes. Place on plates. Lay meat over. Pour on dressing.

Belinda's Fruit Smoothie...

Your choice of bananas, strawberries, pineapple, watermelon.

Put fruit in blender. Add three tablespoons of yogurt (strawberry, vanilla or plain. One tablespoon honey. Half cup lite Vanilla ice cream. (optional)

One cup lite or skim milk. One egg (optional)

Blend it all up and you have a smoothie the kids will love.

 And here is the recipe for Belindas Fruity Fruit Salad.

 A quarter of seedless watermelon.

Half a rockmelon.

Half a pineapple.

2 oranges.

2 kiwifruit.

Half a punnet of strawberries.

1 large mango.

1 cup of green grapes.

1 cup of black grapes.     

Cut all skin off watermelon, rockmelon, pineapple mango, oranges and kiwifruit. Chop into bite sized pieces. Mix fruit in a large bowl to combine colour flavours. Mix the grapes and blueberries. Sprinkle some lemon juice through the fruit this helps to preserve the fruit for longer and stops it from browning. Put into serving bowls and sprinkle with cut up straw berries. This dish can be served with low fat yoghurt, low fat ice-cream or even better sorbet.

OK...here's Belinda's recipe. PASTA MEDITTERANEAN

2 LARGE ONIONS FINELY CHOPPED

4 CLOVES OF GARLIC FINELY CHOPPED

3 FILLETS OF CHICKEN CUT INTO BITE SIZED PIECES

1 KILO OF CHOPPED TOMATOES OR 2 TINS OF TOMATO PUREE

4 TABLESPOONS OF TOMATO PASTE

1LARGE CAPSICUM FINELY CHOPPED

2 CARROTS LARGE FINELY CHOPPED

2 STICKS OF CELERY FINELY CHOPPED

1 SMALL BUNCH OF CHIVES FINELY CHOPPED  

1 SMALL BUNCH OF CORIANDER

ONE TIN OF ANY NAPOLITANO SAUCE  

SOME PARSLEY

400grams OF FETA CHEESE

A HANDFUL OF PITTED KALAMATA OLIVES

250ml OF LIGHT CREAM.

Fry onions, garlic and chicken in olive oil until golden brown, add capsicum, carrots, celery and stirfry with chicken
Add tomatoes, tomato paste and Napolitano sauce Mix well
Add herbs and a cup and a half of water and feta Put lid on and  let simmer for 15 minutes stirring occasionally
After 15 mins stir and it is ready to go
